Matilde makes two Champagnes, a Brut and an extra Brut, the only difference being the dosage. We'd recommend the Brut for aperitifs, drinking on its own or with rich dishes. The Extra Brut is wonderful with seafood such as oysters, it is equally gastronomic with a bowl of truffle crisps or french fries with its high energy.

The marl, clay and limestone vineyards she works with produce more richness than you might expect from a Meunier Champage. Often overlooked as the grape that simply adds acidity and frutiness to Champagnes, Matilde's wines achieve wonderful depth and balance. The bubbles aren't too aggressive and it is a wine that evolves in a good size glass over time.
The grapes for these cuvées come from two sites, one is a plot of 15 year old vines around the village of Baslieux-sous-Châtillon (home to top champagne grower Frank Pascal) and the other vineyard is a magical south west facing slope called Les Chapelleries where Matilde has some 55 year old vines.
